I believe Visitation nuns call the pieces surrounding their face the "barbette" (the white cloth which goes under the chin) and the "bandeau" (the black cloth across the forehead.

This is a Visitandine nun. The order founded by St. Francis de Sales and St. Jane Frances de Chantal. The habit is lovely in it's simplicity.
