Summer eating in Italy: fresh and light...

Part of Catholic culture is to eat together as a family and to prepare a little something nice now and then. This was our first course...with a little salt...and enjoyed in the sunshine!

Prosciuto di Parma (meat),
Mozzarella di Bufala (cheese),
Cicoria (the green which is Brusselslof from Holland),
Salt

The meat is proscuito but the better question is what is the scoop of luscious whiteness in the center. And is there a recipe for it? Please, let there be a recipe for it.

May be melon ice-cream (gelato).

For example:

The scoop of "luscious whitness" is mozzarella di bufala, mozzarella cheese made from buffalo milk that is produced in parts of southern Italy.
